There should be a 1/8"NPT port on your oil cooler.
On my Scarab I drilled and tapped an 1/8"NPT in fitting under my Thermostat. Probably my favorite spot. I could watch the thermostat open on the gauge.

I would not dump too much water from the back of intake manifold. You could cause a problem some were else. On mine I plugged the A/N fitting and then drilled A 3/16 hole in it. You just want to keep the water moving no steam pockets.
