Take a look at Hot Duck's Apache 45. Was a triple boat, converted to twins. You could also PM him for details on why and how he did his.

both engines should be driveline packages. a for better service and b for a better center of gravity. as for the stringers they appear to be usable without creating extra work. you will most likely need custom mounts, but this will help you while c.g ing the boat as will having both engines drive line. as for the transom i would maybe plug the whole transom and start fresh with a propper x dimension..
