Default 24' Excaliber

How hard is it to convert a Berkley jet drive Excaliber to a bravo ouotdrive or something like that???

You'll have to plug transom and re-cut for bravo. Engine will have to move some as well. You'll also need the proper bell housing, coupler and shift mechanism.

doesnt a jet have a big hole in the bottom of the hull that will need to be filled in too???? (pump intake)

yep, you'll hafta fill both the intake cutout and the jet cutout, may need a full transom as some i have seen only have a single 3/4" panel across the transom . It's do-able but will take some work. I have done them before.
