The dash pod looks great.
By the way, for other's projects, you can use regular drywall spackle over the foam if you want so save it for core strength or don't want it eaten by polyester resin. I haven't tried it but I know it was used over divinicell coring which would delam when epoxy was tried to bond to it in epoxy sailboard construction in the early 90s.

Great job. I did the same thing 2 years ago when I needed a throttle mount for my little cat project. Carved up some cheap foam I got from HD then just glassed over it, I used epoxy so it didn't eat at the foam. The carbon fiber is in with epoxy as well. Then I just hogged out as much foam as I could then dumped acetone in to clean out the rest.
