I owned a 35 single step Lightning with HP 500's, same hull as the Executioner, and loved the boat. Have the new twin step 35 Lightning with 525's now and it's definetly an advanced design in terms of handling.
Like I said over there in Porterville, try all of your considered boats then decide what works for you. Sounds like the 353 Formula didn't impress you on your test run. Bottom paint will scrub off some speed, but it's a 70'ish MPH boat in the real world with 496's at best.
Reality here is that most Fountain owners will tell you that Fountains are the best, Formula owners will tell you that Formulas are far better in fit and finish and useable space (they have a tendency to stay away from the performance and handling characteristics for some reason), and Baja owners will follow suit in their own way. Just drive them all, one will stand out for you.
Good luck! It's a great time to be buying a boat.

If you are serious about the Fountain, go with the full stagger setup. Nothing can tough it in terms of performance for it's size except a cat. I think they are getting high 90's with 496HO's and 105 with 525's running ITS drives.

I have a 08 35 Lightning with a full staggered 496's and XR shorties. With the stock 6 blade Herings it runs 84 with full fuel and 4 people. Light on fuel and some good chop and I have seen 89 in salt water. So far it has been a great boat and handles really well. The engine room rigging and interior fit and finish are pretty good as well.
