My 2 cents:
You have 2 drives already that are set far enough for twins, why add the weight of a third?
Like I said the newer engines are soooo much better and with their electronics you can apply more of the Hp that is available without having to give up so much mid-range cruising ability.
That boat with twin 600hp Seateks ran about 70 mph almost 20 years ago without 2 speed gears, drop in 600hp Cummins C's and some 1:1 or slight OD gears and you'll do the same, 2 speeds maybe a few more 75?
The problem with any of this is, if they gave you the boat free your putting $100,000 plus of engine and tranny in a boat that's when done you won't sell for half that probably.
Find 380hp B's, I'm betting around 60-65 mph for one reason, you've taken out a good amount of weight probably 1,000 lbs between the lighter engines and tranny. Get some tunner chips for the B's because they are out there and you can get 425-450 out of them.
These are all guesses, is that the 46' or 43'?

buy the Seatek race engines and do "extensive" maintenance every 25-50 hrs?
Look there is nothing stock that is 1,000 hp that will fit in there, that is light weight. Whatever you start with you are going to have to do modifications to and then you are no better than the Seatek (that is not a knock on them, by like any other performance engines they do not last long).
The old 3 SeaTeks in there weighted about 1,650lb each plus tranny, maybe 300lb on the light side so a full 2,000lb each engine or 6,000lbs for say 2,000 Hp.
QSM 11's are 2,700lbs for 700hp so almost the same weight for 25% less Hp - you are going backwards.
C-18 Cats 1,000 hp and 4,000 lbs each, that's going to sink the boat
C-15's are 850 hp and 3,300 lbs each.
Your best bet is get the Cummins C's 600hp and 2,000 lbs and if you could get someone to remap it, it will run 800hp with ease.

That sure looks like one of the Buzzi 38's? Which one is it????
To me it does not look like the first pleasure one with the 300 Cummins in it, something looks different, could it have been built by Intrepid and not Buzzi???? This boat was after my time I'm guessing either way I'd give my left nut for that boat - I have 3 kids and dog now so the nut is just taking up space away no big loss
