If someone wanted to come anchor and watch the racing where would I shoot for to launch/retrieve the boat? Nothing fancy just an 18 foot center console. Or would it be better from land?

Where will you be coming from? Village Marina or Berger's Marina is close to the races depending on which side of the lake you are staying on. You will be able to launch at just about any marina close to the dam.

Evansville Indiana - so probably interstate 64? Not planning on staying just heading out early and catching the races til they're done then heading back... How deep is the lake where the races are taking place - I have a few different anchor setups and lengths depending on where I'm going.

Watching by land had a better overall view of the course.
You can walk the docks and see the raceboats up close and personal and talk to the racers.

How rough does the lake get? I've ran my 22 avanti in pretty snotty conditions at ky lake but the center console has never been off the river (parents use it from dock to big boat on weekends)
