Open bow is fine on flat water but it sure gets windy up there! Depending on the weight of the individuals up there the tabs might come into play to level out the boat and it can bow steer badly coming off plane.

How big is the cabin on a sunsation 288 mid-cabin? Can the two benches be made into a bed for two people to sleep on for a night or is there not that much room?
