I have an '03 GMC Yukon XL 2500 with the 8.1L and 3.73 gears and I get about 9.5 mpg around town (commute to Chicago) I do not know what highway milage empty is as I haven't had an opportunity to try it out yet. When I towed the boat, 38 Donzi 11,500 lbs dry + 3,000 lb steel trailer, I got 7 or 8 mpg highway. If the diesel option on GM is anything like Ford 5K You will have to tow a lot of miles to make it up in fuel savings.

I have a 2500 AV, with the same runing gear as the 2500 Burb, 8.1, 4sp Auto M32 Tranny, and 4.10 rear end. I have done a number of bolt ons, and I love the truck. It has even beat a few ricers. The only thing it does not pass is a gas station.
If I were you, and I could get away with a 6.0, I would get a 2500 Burb and the 4 Wheel Steering. WAY COOL! Anyhow, either 2500 Burb motor, 6.0 or 8.1 will do you just fine. The 8.1 will do you much better when you upgrade.

If you can do it, take a test ride in a truck with the D/A combo. Go home and tow the boat. I bet you buy that truck. Make sure you use the tow/haul mode with the Allison transmission, the downshift in combination with the tranny brake is AWESOME!!
I don't know how much you really need a suburban, but I have the 2500 HD crew cab long bed with a folding hard top cover (just trying to help ya think outside of the box) and I love this truck. I have a tremendous amount of room in the cab! If I can't get it in the cab, then it belongs in the bed anyway is my thought.
I will never buy a gas tow vehicle again!

I have the Yukon XL with the 8.1 and it towes my Top Gun like a monster!!!! Boat and trailer over 15,000 pounds and it will do 65 miles per hour up the Baker Grade....22 straight miles uphill out of the Death Valley in 120 degree heat! The truck will be three years old this December and I have 38,000 miles on it and have had zero problems!!!! Great ride and great looks with poor mileage but we own offshore boats...so who cares about gas mileage!!! If we did, we would be blowboaters!!!

Got a 03 Yukon Xl with the air ride suspension, 8.1 engine, tow package and 4.11 gears. This thing rides like a Cadillac and pulls my 382 Formula without any problems. When not towing I can burn the rubber off this thing its got so much power ( don't tell my wife its her car). Mileage sucks though, 10 or 11 mpg I think.
