I have run the canton remote oil stats that open at 215.
What did you say your oil temp is at?
I didn't have an oil temp guage on the last set up. I was running with no thermo and then a 120 deg. thermo with 2x 1/4" holes and either way the water temp almost never even registered and the oil pressure was throught the roof.

I am almost consisdering going without an oil cooler on the new set up, but I may have to break down and put in a thermo

Oil temp is critical.
If you do not have any gasket issues. Getting it to
run above 212 will clean that milkshake right up.
I would run mechanical oil pressure.
Run a Electric oil temp.
They make dual function gauges if ya running out of room.
You can never have enough gauges.

I was just looking at those canton thermostats....how did you plumb it into your system?

I've got a new Mocal sandwich type t-stat that I didn't use. I already deburred it and opened it up to max flow. I'll take $75 and ship it to you. I think they are the easiest to use and cost around $90.

I saw those, but I beleive they are set to 180 deg. I'm thinking I want to go with something like the canton that is set to 215 deg. I would certainly like to save the money though, this is getting rough.

The KE style oil stat is easy to plumb and available in 180 degree and 212 degree.

Also I have a nice M-1 with AW324 intercooler for sale complete for a 7.4, 454 or 502 MAG EFI set up.
