Default Carbed vs EFI Fuel Burn

I am considering repowering my 42' Harley to new 496HO's. I am currently running Carbed 415hp 502's with Arneson's. I have a few questions for someone who has done this upgrade in their boat.

Questions:

How much difference in fuel burn did you notice?

Did the new engines seem to have more power than your old ones?

Did you feel like the money was well spent when compared to just freshening your current power?

This boat weighs in around 15,000lbs light and around 20,000+ lbs heavy. I use it for long range fishing and cruising. I'm hoping to carry a little less fuel onboard for the longer excursions.
