Do 800 hp out of one engine produce the same speed as 2 x 400?

No .. 2 Motor's Will Have More Drag And Also Weigh About 1200 Lbs More Including The Drive .

What Size And Make Boat Are You Looking At ?

i try to compare the power of my boat (Baja 32 with 2 x stock 454 mags) with others with just one engine. mine have a little more than 700 hp and total weight of ~6000 lbs.

I would think with 800HP it would not have an issue. Here is a link to a 32' Sunsation making 875HP and it seems to fly with only one motor where two is the norm.

Yes, but that has the Konrad Ace drive package.
