And the PCV valves were routed to the underside of the intake, not attached to a breather.

Yeah, and I was wondering if the valve covers might be missing baffles or something given the way that oil is kinda bubbling out of the breather!

Would old oil (or the break in oil used) cause the low oil pressure reading?

Doubtful on the oil unless it was really fuel-diluted or a really low weight oil. I still wouldn't trust what those gauges are saying until I verified them with a mechanical gauge.
