Grease
What all area's do I need to be greasing? Keep in mind your talking to a newbie at owning a boat so I need to know the area's that I need to be watching pretty regularly. The only thing I've mainly been doing is the one on the outdrive.
Also, how often do I need to repack my trailer bearings? They are all packed with caps on them......do i need to worry about these?
Just need to know in general which area's to grease and how often.

are your wheel bearings the bearing buddy type? If so then you just need to keep a eye on them. If they get to the bottom a couple pumps of grease will get ya rolling again. You do not want to fill them all the way up because when the grease gets hot it will push off the buddy or make a mess as the grease goes out the preasure releif valve. From there do a close inspection of your drives and such and look for any grease fittings.
