Default pro charged 502 mpi w/high oil temp

I have a 24 ft. fountain with a procharged 502 mpi, the engine runs great and will run 90 mph when ever i ask her to. The problem is everyone I talk to says their oil temp runs at about 180-200 degrees, mine hits 320 degrees within a mile of running @ about 3500 rpms. We changed the t/stat, spring and check valve in the thermostatically controlled oil filter adapter and no difference, removed the t/stat and had no difference, just installed a much larger after market oil cooler and had no difference in oil temp, all the oil lines are clear of obstructions, Does anyone have any ideas of what else would be causing this type of oil temperature? Please advise on what to do.
Thanks maxum

I always start with the simplest/cheapest things first. Which would be checking the guage and sending unit.

Thanks, but we checked both of those as well and there's nothing wrong with them, we shot the filter w/ a temp gun and it was 20 degrees cooler than the oil temp gauge reads, which is understandable that the out side temp would be a little cooler than the oil in the filter thanks for replying though, maxum

where is the gauge picking up the oil temp and can you get a infared heat gun to verify temps .puy the sending unit down by the oilpan rail on the odd bank and readthe temp going into the block . it should be cooler . what temp does the engine coolant temp .

the sending unit is next to the distributor and the water temp never goes above 120 degrees, reading some other forums the bypass valve, i replaced the one on the filter adapter, what about the one on the block where the filter would normally go, does it have to have a greater pop off pressure?
