EFI- who’s running o2 sensors?

Ive been kicking around the idea of converting to the Holley sniper set up.
Currently have twin Holley 850’s on 8-71 blowers.
I spoke to several people at Cig rendezvous running EFI. no one left there o2’s in place. Some ran short term to get tune set then locked program and removed sensors. Others said they never used sensors and tuned motors out of boat then locked tune in. Everyone says “no way to keep o2 dry” or “prone to leaks”.
i can tell you for 100% certainty I’m capable of cutting a large access panel into the outer water jacket, drill a hole in exhaust, weld o2 bung in place with a tube extending through access panel. Then cut matching diameter hole in panel, weld panel back in and around o2 tube. tig’d and purged to perfection.
Although I am a highly talented welder/fabricator 😎, I don’t understand why I haven’t seen or heard of it done before.
what am I missing??? Has anyone done this yet? I’m not thaaat smart....

People here do it all of the time. Eddie Young even posted a how-to thread with pics on adding a bung. I put mine in at 12 o’clock but 10 o’clock seems to be more popular and also easier to tuck away the wires. I used an innovative heat sink which helps protect the O2 sensor. Three seasons and no issues so far.
How to install oxygen sensor bungs.

I would highly recommend running the hp computer at least, and terminator throttle bodies, if not hp. The sniper only supports one IAC, which will be no fun with a roots setup

I ran Innovative O2 sensors on a 900hp blower motor for 3 seasons with no failures. this was with Stainless Marine Gen 3 exhaust. Here is the placement i used. Go for it

I run a wideband O2, you can see the bung we welded in the riser.
