If your boat is already setup for standard transom assemblies, what is the likely outcome of having drives lower in the water due to the 7" setback? Would you end up being slower?

The ITS's have a built in 1.5" lift to the boxes. This should in general keep the props depth the same as standard transom assemblies but gain the advantage of the better leverage of the drives being further off the transom.
