I really liked the V setup. The cat was awesome with great lines. I was not even going to ask a price. Some of the prices on the boats were out of this world. i could hardly afford a beer at $6.

Something, somewhere is clogged. Start at the top and work your way down on that side until you are sure everything is perfect.
What kind of exhaust is this. Sounds like stock Merc. Not very expensive at all to replace if that is what it is.
Either way, you have a problem. Probably a good idea to try and find it.
Your engine water is not really that hot, but I guarantee that head and that side of the engine is way hotter than it is reading.
Hit it with a temp gun after you come off plane and see what it reads at the back of that head, and then at the front and then on the other side of the motor. If your guage is reading from the water neck side, it is getting an average using the cold water on good side of the engine and the really hot side.
You need to figure out what it is though. You could have dirt or sand on that side of the block also. Open your block drains and see if anything comes out. You can back flush from the bottom of th block also. Take the lines off of the top.
