If they are in good shape(which they probably are, hard to kill them), they are VERY reliable motors, and very torquey on the low end(no problem getting on plane). They don't rev like a 2.4 or 2.5 V-6, but like I said above, give 'em good oil, keep the RPM below 6000(stock rev limiter is set at 5800), and they will live forever(almost)
One thing though, 3.0 liter EFI Mercs are very thirsty, they definitely don't run lean, but that is part of the reason they last forever. I would suggest removing the oil injection(if it hasnt been done already) and pre-mixing, just for piece of mind. Not familiar with the 30' Shadow, but should be close to 80(may have to mod them a bit to break 80). My 250 single pushes my 24 Pantera to 60 at 5400rpm. Find out the shaft length, they are probably 25" motors, your boat may be OK with 25" shaft, but could need a 20" Driveshaft can be cut, but the mid would have to be changed out to a 20. Being 30' you are probably OK with 25", and jackplates.
